Serves 2-4
Prep Time: 3-4 hours
3 to 4 duck breasts cut into bite size pieces
2 large cans tomatoes crushed
2 large cans tomato sauce
1 small can tomato paste
2-3 tsp.oregano
olive oil
1/4 lb. fresh mushrooms,sliced
5 green peppers,sliced large
1 large onion cut up fine
8 cloves garlic crushed
1 pkg. (1lb) frozen peas
In a large pan mix together tomatoes,tomatoe sauce,tomato paste and oregano.sautethe mushrooms,peppers,onion and garlic in olive oil untill tender. add to tomato sauce. add the duck to sauce for 3-4 hours in a covered pot ( the longer the better ). add peas 15 minutes before serving.
Serve with lots of garlic bread and parmesan cheese..
